Sesame Extract
Freeze dried sesame extract, extracted at pH 3 and 7 from sesame seeds.
Description
Sesame (Sesamum indicum) seed allergy affects an estimated 0.1–0.2% of the general population, with higher prevalence in the Middle East and other regions where sesame is a staple in traditional foods. Reports of sesame seed allergies have risen in the 21st century, possibly due to increased exposure to sesame-containing foods or heightened awareness of the allergy. This growing prevalence has prompted more countries to require food labels to clearly identify sesame ingredients and highlight potential allergy risks. In the United States, sesame became the ninth food allergen requiring mandatory labeling as of January 1, 2023.
An allergic reaction to sesame is an immune hypersensitivity to proteins and lipophilic proteins found in sesame seeds and sesame-based products, including food-grade sesame oil. Symptoms can develop rapidly within minutes or more gradually over several days. Rapid reactions may include anaphylaxis, a potentially life-threatening condition that requires immediate treatment with epinephrine. Slower-onset symptoms may involve atopic dermatitis or esophageal inflammation. In many countries, sesame is now required to be labeled on food products, alongside the eight most common food allergens responsible for 90% of allergic reactions: cow’s milk, eggs, wheat, shellfish, peanuts, tree nuts, fish, and soybeans.
